bruschetta

Since Ben has the night off of work, he volunteered to cook supper. He said it was a surprise but I know it is Shrimp Fettuccine Alfredo with a secret sauce. Sort of. Since I also put the groceries away when he came home from the store, I have an idea what is in the works.

So, I am making bruschetta as a side tonight and am really excited about it. I was goofing around with garlic over the weekend, and came up with the best ever topping for the bread so I wanted to share it. Bon appétit!

Bruschetta

1 loaf Italian or French bread, sliced in half the long way and cut into serving sizes
8 ounce package cream cheese, softened
Olive oil
2 TBS. minced garlic
1/3 cup finely minced onion
1 fresh tomato, cut into small cubes
Generous dashes of fresh ground black pepper
Coarse salt
Fresh or dried basil, to taste

In bowl, place garlic, onion, tomato, pepper, basil. Drizzle generously with olive oil. Add coarse salt to taste. Marinate on kitchen counter for at least half an hour.

Right before serving, toast bread in oven. Spread with cream cheese and top with marinated tomato mixture. Add more olive oil if desired.
