caramel dream bars

I do not often make desserts during the week but Sunday is another story. We all like to come home from church to a big Sunday dinner so that is the one day of the week when I plan something sweet and delicious. This recipe came from my daughter who knows how chocolate-crazy we all are in this house, except for Grandma who keeps saying “I’m not a chocolate lover” as she fills a plate with brownies or chocolate chip cookies. This is really yummy as it is but I think it would be extra good served warm with a scoop of vanilla ice cream.

Caramel Dream Bars

1 c quick-cooking oats
1 c packed brown sugar
1 c flour
1/2 t baking soda
1/4 t salt
3/4 c very soft butter

1/3 c milk
1 - 14 oz pkg caramels

1 c chocolate chips
1/2 c chopped walnuts or pecans, optional

Combine first 6 ingredients. Sprinkle 1 c of this in bottom of a greased 13×9 pan. Don’t press. Bake 10 minutes at 350.

Melt milk and caramels on stove, stirring constantly. Pour this atop the crust you just made. Sprinkle chocolate chips and nuts on top. Top it off with the rest of the oat mixture. Bake this also for 10 minutes at 350. May need to refrigerate to set caramel after cooling.
